3 meats a week is actually quite easy to do, and most nutritionists will tell you that red meat 3 times a week is ideal.

As for soy, I am not sure where you are getting that information from, as I have checked in many places and all list soy milk as alkaline.  In any case, even if it does have a high acid value, it is certainly alkalizing in the body, just like citrus fruit and tomatoes are.  Both are extremely acidic in natural form but are alkalized by a working digestive system.
